A lot of you have been asking for Paleo recipes since I posted about it on my Reader Q&A, so here is a dish I make regularly: Paleo Meatloaf. We gobble it up over here - Squish included - and it is the easiest EVER to make. Take a look:
Ingredients:
1 pound ground round or ground meat
1/4c tomato puree {no high fructose corn syrup - only tomatoes}
1 6oz can tomato paste
1/4c white distilled vinegar {yes, the same thing you would use to clean your floors with!} OR Bragg's organic raw unfiltered apple cider vinegar is also an option
1T or 1t lemon juice
1T garlic powder or 2 cloves minced garlic
1/4c or 1/3c honey depending on how sweet you want it {I do 1/4c}
1 yellow onion baseball size
1/2 large red bell pepper or 1 small one
1 raw egg
1c almond meal
Instructions:
Mix.
Bake uncovered in a glass dish at 375 for one hour. I turn the oven off and put a piece of foil on top and let it sit for at least another hour, but sometimes two or three if I forget it is in the oven and it is great.
Note: If your meat is not completely thawed do not cook it! The ice crystals will tear up the meat and make it tough and not as tasty. Near room temperature is the best.

ReplyDelete3/4 blueberries-I freeze them 1st
1 banana-also frozen
1/4 cup organic coconut milk
1/4 cup ice cold water
1 cup chopped kale
1 tbs agave nectar
blend it all up until it is smooth and then enjoy...in a fancy glass...the fancy glass is optional...but more fun!
I wish I could remember where I got this recipe...there were others!

I was just looking through some of your past kitchen posts (due to the fact that the meat~loaf totally rocked my hubby and 7 yr old Grady's world!!!) and I want to thank you for the one on Agave. I am always in search of the healthiest items to promote wellness and ward off disease. I was lured into the agave hype...I have thrown out my bottle! Please substitute honey or maple syrup in the smoothie!

So glad you found that previous post!!! Dr. Mercola's site is amazing (where that article came from). It should be a daily read for everyone on the planet! I will try the smoothie recipe for sure but sub honey in for the agave and see how it works :)

ReplyDeleteThanks for this recipe. I just made it tonight! I used to do a Paleo-ish diet but then got pregnant and haven't gotten back to it until just recently. SO GLAD I DID. Not only did I love the meatloaf, but more importantly, my husband did. Feel free to post more great (and easy!) recipes.

I know I've thanked you before but I feel so much just wanted to say thanks again for introducing paleo to me. My mom's now trying it and a coupe of friends.I've tried out a couple of really good veggie recipes if you are ever looking for some.

ReplyDeleteI was SO excited to read that you are PALEO! One of my mentors (who has fibromyalgia) told me that it was imperative for me to start eating Paleo, since I have some auto-immune health issues AND migraines! She said that it has absolutely changed her life, and her weight!

Robb's book The Paleo Solution is the primary book I would recommend to understand the science and reasoning behind Paleo in general. I just bought a cookbook called Everyday Paleo - the woman who wrote it is actually mentioned in Robb's book - but I haven't actually used any of her recipes yet. They all look great though!! There are lots of Paleo recipes online if you look around, but not all are full Paleo so you should definitely understand the idea before you dive into cooking dishes. I'll post more Paleo related stuff soon!! xx

ReplyDeleteI have Everyday Paleo and I pull recipes from her blog - they are great so far. So easy to search with the main ingredient and get a whole bunch of meals to choose from.
